Quinoa Salad with Peaches

  • 1 1/2 cups water
  • 3/4 cup uncooked quinoa
  • 1/4 cup minced red bell pepper 
  • 1/4 cup chopped green onions 
  • 3 tablespoons fresh lemon juice
  • 1 1/2 tablespoons olive oil 
  • 1/2 teaspoon kosher salt
  • 1 1/2 teaspoons honey
  • 1/4 teaspoon black pepper
  • ripe peach, pitted and thinly sliced 
  1. 1. Bring 1 1/2 cups water to a boil in a medium saucepan. Add quinoa to pan; cover, reduce heat, and simmer 20 minutes. Cool quinoa slightly. Stir in bell pepper and remaining ingredients.
